
Nothing beats a hearty chicken soup on a cold, rainy Vancouver day. I sometimes like making mine with some Chinese melon as it adds sweetness to the soup. It’s also great as a noodle soup base for the next day.
Winter Melon Chicken Soup
A light and nourishing soup made from chicken drumsticks and winter melon. Add in some red dates for extra sweetness. You got a whole meal with protein and vegetables ready in 15 minutes!

Serves: 4

Ingredients
- 1 inch knob ginger, sliced
- 7-8 chicken drumsticks, seasoned with salt & white pepper
- 4 cups wintermelon, cut into chunks
- 3 Chinese dried shiitake mushrooms, rehydrated
- 1 tbsp Shaoxing Wine
- 1/4 cup red dates
- 5.5 cups water
Directions
- Add a teaspoon of oil into a non-stick pot or clay pot.
- Add ginger and drumsticks. Sautee for 1-2 minutes until lightly browned.
- Add Shaoxing Wine. Stir for 1 minute.
- Add mushrooms, wintermelon and red dates.
- Add water and cover lid.
- Boil under medium-high heat for 12 minutes.
- Season with salt to taste.
- Serve and enjoy by itself, with rice or noodles!
