Baked Haddock in Miso Coconut Cream

This is another one of those dinners where I created something dreamy from random leftover fridge ingredients. Without thinking, I decided to make one of my husband’s favorite foods: cheesy baked rice dishes.

Packed with delicious umami flavors from the miso and mushrooms, this creamy dish will only leave you craving more. The fish and spinach pair is a classic Hong Kong style combination. Normally, you will find basa fillets being used because of its affordability. However, I am using fried haddock here. You can fry your own or just use frozen store-bought fish for convenience.

The coconut cream creates depth and a nutty sweetness to the sauce, but if you don’t have that at home, swap it with normal cream or oat milk!

Friendly Note: Before you eat, let the dish cool for 3-4 minutes. Everything is piping hot and you don’t want to ruin your meal by burning your tongue!

Baked Haddock in Miso Coconut Cream

Indulge in a cheesy and creamy rice dish packed with umami flavors from the miso and mushrooms while perfectly balanced with nutritious textures from the spinach.

Cook time: 15 minutes

Serves: 2

Ingredients

  • 5-6 pieces of fried Haddock (or any fish, home-made or store-bought)
  • 2 tsp butter
  • 1 tsp flour
  • 1 tsp miso paste
  • 1/4 cup chicken or fish stock
  • 1/4 cup water
  • 1 can (~2 cups) coconut milk (I recommend using Aroy-D brand)
  • 1 cup button/cremini mushrooms, sliced
  • 1 cup spinach, chopped coarsely
  • 1 cup marble cheese, grated
  • Rice
  • Salt and pepper to taste

Directions

  1. Cook rice.
  2. Cook haddock according to package instructions.
  3. Melt the butter in a big sauce pan. Add flour and miso paste and mix to make a roux.
  4. Add stock little by little while mixing to form a thinner looking paste. Once all stock is used up, add water and mix until combined. The paste should now look less pasty and more saucey.
  5. Add coconut milk and stir.
  6. Add in mushrooms. Cook for 2 minutes until adding the spinach. Cook for another 1 minute.
  7. Spoon cooked rice on a baking dish.
  8. Layer on top with fried fish.
  9. Spread cream sauce evenly over the fish and rice.
  10. Top off with grated cheese.
  11. Broil in the oven on high heat for 2-3 minutes until cheese is melted and slightly browned. Watch carefully so it will not burn!
  12. Let cool for 3-4 minutes before serving. Enjoy!
