Pancakes or waffles? It’s always a tough choice. All I can say is that these pancakes are not only super simple to make, they’re also very delicious. It’s soft and fluffy, perfect for a weekday or weekend breakfast. Pair it with some bananas, maple syrup and a dollop of butter and whipped cream. You will have a perfect start to your day!

Banana Pancakes
This banana pancake uses ripe mashed bananas to naturally sweeten and moisten the batter, creating soft, fluffy pancakes with rich banana flavor. It’s a simple, wholesome twist on a breakfast classic.

Ingredients
- 3/4 cup all-purpose flour
- 1.5 teaspoons baking powder
- 1.5 tablespoons sugar
- 1/3 teaspoon salt
- 1 large egg
- 3/4 cup milk
- 1.5 tablespoons unsalted butter, melted and slightly cooled
- 1/4 tsp vanilla extract
- 3 bananas (mash 1, slice the other 2 as toppings)
- Toppings: bananas, maple syrup, butter, whipped cream
Directions
- In a large bowl, combine and mix dry ingredients using a whisk.
- Form a well/hole in the middle of the bowl and add in egg, milk, melted butter and vanilla extract. Whisk until well incorporated. Be careful not to over-mix – you wouldn’t want tough pancakes!
- Gently fold in mashed banana (again, being careful not to over-mix).
- Brush melted butter on a pan under medium-high heat. Scoop 1/4 cup of pancake batter onto pan and let it spread until it stops.
- Cook for 2 mins until bubbles appear on the surface and edges start to brown.
- Turn heat down to low-medium heat. Flip pancake and cook for another 1-2 minutes until surface is golden brown and center is cooked. (You can test it by gently pressing on the pancake to see if it gives a nice soft and bouncy texture.)
- Transfer pancakes to a clean plate. Top with sliced bananas, butter and serve hot with your favorite maple syrup!
