So here are these guilt-free energy balls that will satisfy your sweet tooth but not let you gain that extra weight you don’t want.

Matcha Bliss Balls

These matcha snack balls are packed with nutrients from dates to chia seeds to nuts. They are gluten-free and oven-free, so there is no reason why you won’t make these easy and delicious bites. It’s also perfect for a quick breakfast before work or a short hike!

Prep time: 15 minutes

Yield: 8 bite-sized balls

Ingredients

  • 1/2 cup medjool dates, pitted and roughly chopped
  • 1/8 cup chia seeds
  • 1/4 cup almond flour
  • 1 tbsp matcha
  • 1 tbsp coconut shreds
  • 1 tbsp chocolate, finely chopped
  • 1/2 tbsp honey
  • 1/8 cup chocolate for melting

Directions

  1. In a food processor, blend all ingredients (except the chocolate for melting) until well combined and mixture is sticky.
  2. Scoop a tablespoon of the mixture and roll into a ball. Repeat until finished.
  3. Place balls on a parchment paper.
  4. Melt chocolate in the microwave.
  5. Spoon a teaspoon of chocolate and spread/drizzle over bliss ball. Repeat with all the remaining balls until finished.
  6. Let it chill in the fridge for 10 minutes.
  7. Serve and enjoy!
  8. Note: let the ice-cream sit in room temperature for 5 minutes before you scoop out the ice-cream. It’ll be too hard to scoop right out of the freezer.
